Instant Pot Copycat Starbucks Sous Vide Egg Bites

Alright you lazy breakfast lovers, this one’s for you!

As we’ve discussed before, I’m the girl who values 10 more minutes of sleep over eating a balanced breakfast (bad dietitian!), which means I find myself in the Starbucks drive-thru more times than I’d like to admit. My go to order – an Iced Skinny Blonde Vanilla Latte (basic) and their Bacon & GruyΓ¨re Sous Vide Egg Bites. I could eat those every day, but my wallet would really appreciate it if I didn’t. So I set out to recreate them and by-golly, I think I did. Forgive me, because these aren’t the prettiest thing to photograph, but the important thing is that they taste darn good!

(Not So) Pro Tips

I’ve gotten quite a bit of demand to start posting some of my favorite Instant Pot recipes, so I apologize that you can’tΒ make these as easily without an Instant Pot. You could attempt to do them with a regular sous vide or using a steamer basket, but honestly, I think the Instant Pot is worth the investment if you like fast and easy meals. It cuts down on time and the number of fancy kitchen gadgets you need.

For this recipe, you’ll also want to get your hands on this silicone mold I found on Amazon (or something similar). I liked this one because it was easy to pop the egg bites out without having to spray it down with cooking oil.

A note on nutrition…

These egg bites are a great protein source for breakfast given the combination of eggs, Greek yogurt, and cheese, but the one thing that prevents them from being a balanced breakfast is FIBER. You guys know I love fiber and talk about it constantly. A good goal is to incorporate some at every meal if you can – gotta get in those fruit and veggie servings!

I definitely recommend pairing these egg bites with a source of fiber to make it a more substantial breakfast. Enjoy with your favorite fruit, some whole grain toast, or maybe toss some veggies into the egg mixture itself! Instant Pot Copycat Starbucks Sous Vide Egg Bites
A perfect dupe for Starbucks' Bacon & Gruyere Sous Vide Egg Bites. A breakfast option that is bound to save you time and money in the mornings!

Instructions
  1. Fry the bacon over medium heat until it is just beginning to crisp.
  2. Add the eggs, cheese, Greek yogurt, salt, and pepper to a blender.
  3. Blend on high until well combined.
  4. Add 1/2 sliced of bacon to bottom of silicone mold and pour egg mixture over the top until about 3/4 full. Cover the mold with foil.
  5. Add 1 cup of water and the trivet to your Instant Pot. Place the silicone mold on top of the trivet.
  6. Use the STEAM setting and set the timer for 8 minutes. Then allow the pressure to release naturally for 10 minutes. Release any remaining pressure before opening the Instant Pot.
  7. Remove the silicone mold from the instant pot and allow to cool a few minutes before enjoying.
Recipe Notes

These Instant Pot Sous Vide Egg Bites can be stored in the refrigerator for up to 1 week. Microwave for 30-45 seconds to reheat. Egg bites can also be frozen and then microwaved for 1 1/2 to 2 minutes.

    Thank you for this! I just got the instant pot for Christmas and made some Greek yogurt, and was dying to try the egg bites but don’t have any cottage cheese or heavy cream, like most of the recipes call for. I do have some delicious fresh Greek yogurt though, and now I can use my instant pot yogurt to make egg bites! Perfect!

    Just did a couple batches and turned out great! First batch a little sticky. Added microwaving bacon then using greasy paper towels to wipe inside of silicon molds. much smoother exit.Thanks!

    Hi, I see the serving size is 14. Does that mean the 8 eggs, 1/2 cup yogurt, etc. are for 14 molds using 2 (7 hole) silicone molds? I see that I can pare down the recipe to 7 and it tells me 4 eggs, 1/2 cup yogurt, etc. But, just making sure if the serving size says 14, it means 2 molds.

      Hi Karishma, great question! You are correct. Using the recipe with the serving size set at 14 will fill two 7-hole molds (for a total of 14 egg bites). The serving size is referring to “each”, meaning the total number of egg bites that the recipe will yield.

    These completely fell apart when I inverted the silicone mold. I even greased the mold before adding the ingredients. I wonder if I added too many goodies… minced Aidell’s habanero sausage, roasted bell pepper, sauteed mushrooms and green onions. The flavor and texture were great though, I will definitely try again. The current batch will probably end up as a breakfast burrito, lol. I was happy to find a recipe that I could use on hand ingredients!

The egg mixture has the structure to support only so many ingredients, so I think you’re correct in thinking that you may have added too many goodies (though your combination sounds delicious!).     These came out perfectly!! I discovered that I was out of foil after a poured the mixture into the mold. I went with it, and put them in uncovered; They still came out great. I was also out of yogurt, but had some ricotta left over from lasagna. It’s a great alternative. 😊
