Samantha (Osterhaus) Hargreaves is a Registered Dietitian, Certified Intuitive Eating Counselor, and Founder of Mindfully Well, a nutrition counseling private practice based in Minneapolis, Minnesota serving clients in Minnesota and Iowa. She is fiercely passionate about weight-inclusive, equitable healthcare for all and is dedicating her career to helping clients heal from eating disorders and disordered eating. She is also particularly interested in the intersection of disordered eating and chronic illnesses, and has additional experience in polycystic ovary syndrome (PCOS), type 2 diabetes, heart health, and thyroid health.

Sam is compassionate, curious, and non-judgemental in her approach to nutrition counseling. While she holds a lot of wisdom and experience related to nutrition, she honors the wisdom, knowledge, and experience her clients have in their own bodies, and she walks alongside them to cultivate their personal practices for well-being and self care. Sam practices through a Health at Every Size and trauma-informed lens. She recognizes the impact of past experiences on present relationships with food and body. She is driven by a commitment to whole-person care, and her approach often delves into the mental, emotional, and societal aspects of food, nutrition, and body image.

Sam received her Bachelor of Arts in Health and Human Physiology (Health Promotion) from the University of Iowa and her Masters in Public Health Nutrition from the University of Minnesota Coordinated Masters Program. She has spent the last decade learning, unlearning, and growing with the support of her incredible mentors and clients. Sam’s professional experiences include roles in corporate wellness and foodservice, public health, and private practice – all of which have informed her perspectives and values around whole-person well-being and the impact of the systems in which we exist. Sam enjoys mentoring aspiring dietitians and supporting them with embracing client-centered and weight-inclusive approaches in their practices.

Outside of work, Sam enjoys spending time with her husband, Colin, and dog, Huck (ask her to see pictures of Huck anytime!!). Sam finds a lot of joy in food, so you’ll often find her checking out new restaurants or cooking up something fun in the kitchen. She also loves reading, collecting houseplants, and being outside, especially near water or in her backyard orchard and garden.

Her philosophy is that nutrition should be simple. We have enough going on in our lives that we don’t need to add stressing about food to the list.
